Vaquero Bean Dip

Ingrdients

  • 1 1/2 tbsp salt for brining
  • 1 cup uncooked Vaquero beans
  • 1 tsp olive oil
  • 3 chopped scallions
  • 2 tsp salt for cooking beans
  • 2 1/2 tbsp lemon juice
  • 2 garlic cloves minced
  • 1 tsp ground cumin

Procedure

  1. Dissolve 1 1/2 tbsp salt in 2 quarts cold water, add beans and soak for up to 24 hours.
  2. Drain beans then cook as per standard procedure until thoroughly soft. Puree to preference with immersion blender.
  3. Cook scallions & garlic as per usual, add cumin.
  4. Add beans to scallion pan with lemon juice and 2 tsp salt.
  5. Mix thoroughly and simmer.

Note this calls for cooking beans with salt. I used to think this made beans tough but wasn't a problem here.
