Vaquero Bean Dip

Ingrdients
- 1 1/2 tbsp salt for brining
- 1 cup uncooked Vaquero beans
- 1 tsp olive oil
- 3 chopped scallions
- 2 tsp salt for cooking beans
- 2 1/2 tbsp lemon juice
- 2 garlic cloves minced
- 1 tsp ground cumin
Procedure
- Dissolve 1 1/2 tbsp salt in 2 quarts cold water, add beans and soak for up to 24 hours.
- Drain beans then cook as per standard procedure until thoroughly soft. Puree to preference with immersion blender.
- Cook scallions & garlic as per usual, add cumin.
- Add beans to scallion pan with lemon juice and 2 tsp salt.
- Mix thoroughly and simmer.
Note this calls for cooking beans with salt. I used to think this made beans tough but wasn't a problem here.
