Christmas Lima Beans In Gorgonzola Cream Sauce

Give the beans all the time they need to cook through otherwise they have the mealy texture many people find off-putting.

Ingredients

  • 1 cup dry Christmas Lima beans
  • 3 tblsp olive oil
  • 8 oz mushrooms chopped coarsely
  • 1 small onion chopped
  • 2 cloves garlic
  • 1 cup half-and-half
  • 2 oz crumbled Gorgonzola

Procedure

  1. Cook beans thoroughly.
  2. In a large pan, cook onions, mushrooms and garlic.
  3. Add half-and-half and whisk until it starts to bubble.
  4. Add cheese and reduce to desired consistency.
  5. Add beans, season with salt and pepper, garnish with parsley.
