Rio Zape Beans with Sweet Potato

Adapted from Rancho Gordo Bean Club News 1Q2024.

Ingredients

  • 1 cup dried Rio Zape beans
  • 2 lg sweet potatoes
  • Salt, pepper, chili powder
  • 1 oz olive oil

Procedure

  1. Preheat oven to 400F
  2. Line a half sheet with parchment paper
  3. Cut sweet potato into chunks and toss with salt, pepper, chili powder and olive oil
  4. Spread on parchment paper, roast for 30 min optionally turning
  5. Increase oven temp to 450F to caramelize
  6. Cook beans as per standard procedure, don't drain
  7. (Optional) augment beans with (for e.g.) watermelon ghost pepper sauce
  8. Add cooked sweet potato to beans, stir thoroughly
  9. Serve with Yogurt Green Sauce

The sauce is the real find here. Try cooking beans the day before and leaving them in the pot to soak up the last of the water.
