Tofu Snacks

  • 1 lb extra firm tofu
  • 1 jalapeno or 1/2 scotch bonnet or whatever hot pepper
  • 3-4 green onions
  • 1/4 green bell pepper
  • 1 tblsp soy sauce
  • 1 tblsp rice wine vinegar
  • 1/2 tsp ginger

Squeeze the tofu to remove excess water. Cut into chunks of your preferred size, like 1x1/4x1/4". Lightly grease a large pan (prefer half sheet). Arrange the tofu chunks in the pan so they don't touch. Apply a light coating of spray oil. Bake at 400F (preheated) for 25-30 min. Maybe turn partway through.

Chop green onions as usual. Slice the bell pepper into very thin strips. Mince the hot pepper very fine (applying standard safety protocols).

Preheat 1/2 tblsp cooking oil in a large pan. Turn on the stovetop fan (to exhaust hot pepper fumes). Once the pan is sizzling hot throw in vegetables and roasted tofu. Cook to desired doneness, tofu should become tough and chewy. Stir briskly throughout.

When almost done cooking add soy sauce, ginger and rice wine vinegar. Continue cooking until only rhe slightest amount of liquid remains.
