== Vaquero Bean Dip ==
* 1 1/2 tbsp salt for brining
* 1 cup uncooked Vaquero beans
* 1 tsp olive oil
* 3 chopped scallions
* 2 tsp salt for cooking beans
* 2 1/2 tbsp lemon juice
* 2 garlic cloves minced
* 1 tsp ground cumin
== Procedure ==
# Dissolve 1 1/2 tbsp salt in 2 quarts cold water, add beans and soak for up to 24 hours.
# Drain beans then cook as per standard procedure until thoroughly soft. Puree to preference with immersion blender.
# Cook scallions & garlic as per usual, add cumin.
# Add beans to scallion pan with lemon juice and 2 tsp salt.
# Mix thoroughly and simmer.

Note this calls for cooking beans with salt. I used to think this made beans tough but wasn't a problem here.
