Roasted Cabbage

Ingredients
- lemon juice and zest
- 1/2 oz olive oil
Procedure
- Preheat oven to 550.
- Cover a half sheet with parchment paper.
- Slice the half cabbage into 6 wedges.
- Mix a bit of lemon juice and zest with the olive oil, brush some over the pan, place wedges flat side down and coat the upper sides with remaining oil and juice.
- Place pan on the top rack of the oven. Once the tops have started to caramelize around the edges, the undersides are probably quite done, turn to check.
