Alubia Bianca Beans in Southwestern Chile Sauce
Based on a Rancho Gordo Bean Club recipe (2023Q3).
Ingredients
- 1 oz olive oil
- 1 cup dried alubio blanco beans
- 1 onion, 320 g
- 1/2 green pepper
- 6 oz red wine (variable with veg stock)
- 4 oz veg stock
- 2 oz jalapeno
- 4 garlic cloves, crushed and minced
- 3 tblsp New Mexican red chile powder
- 1 tsp mexican oregano
- 1 tsp whole cumin
- 1 tsp salt
Procedure
- Cook the beans as per usual
- Cook the onions partway then add the green pepper, jalapeno, chile powder, cumin, salt, oregano and cook to preferred doneness
- Deglaze the pan with the wine, cook to remove alcohol, then add veg stock, cooked beans with 1 cup broth
Serve with chopped raw onion, shreddar and preferred hot sauce.
