Broccoli, Roasted

Ingredients

  • 640g broccoli crowns (something more than a pound)
  • 1/2 lemon juice and zest
  • 3 tblsp olive oil
  • 2 tblsp minced garlic
  • 2 tblsp grated romano/parmesan
  • salt & pepper to taste
  • pinch of hot pepper flakes (optional)

Whisk together all ingredients thoroughly in a large bowl. Toss with broccoli until coated evenly. This may take a bit because theres not really a lot of seasonings compared to the amount of vegetable. It may help to let it stand for a few minutes at a time in between tossing.

Spread out the brocs in a large pan. Don't let seasonings go to waste in the bowl--scrape them out over the pieces in the pan.

Preheat oven to 425 degrees. Cook for 30 minutes.

Serve with a dash of fresh lemon.
