Curried Chick Peas with Onion

Ingredients

  • 3 tbsp cooking oil
  • 1 cup dried chick peas
  • 2 medium onions medium chopped
  • 1 tsp salt
  • Several turns of coarsely ground pepper
  • 1 1/2 tsp cumin seed
  • 1 tsp citrus rind
  • 1 tbsp garam masala (curry powder)

Procedure

  1. Soak the chick peas overnight and boil gently 1 hour or until soft.
  2. Heat the cooking oil in a hot and heavy pan (set to 7 or 8).
  3. Add onion to the pan, then salt, pepper and cumin seed.
  4. When the onions are transparent, add the chick peas, citrus rind and curry powder.
  5. Continue cooking over high heat until the chick peas sear and the onion starts to turn black. Take care to scrape up the browned bits from the bottom of the pan.

Serve

With lemon yoghurt.
