Domingo Rojo Beans With Rice

Loosely based on "Casamiento Salvadoreno" from the Rancho Gordo bean club news 2023Q3, but that recipe looked rather bland so I beefed it up quite a bit.

Ingredients

  • 1 cup dried Domingo Rojo beans
  • 250 g chopped onion
  • 8 oz mushrooms
  • 1 small green pepper, 150 g
  • 1 celery stalk, 100g, minced
  • 200 g yellow squash (optional)
  • 1 tblsp New Mexican red chile powder
  • 2 large cloves garlic 16 g
  • Veg stock up to 2 cups depending on quantity of bean broth
  • 1 cup uncooked brown rice
  • Leaves of 1/2 oz Italian parsley

Procedure

  1. Cook beans as per standard procedure
  2. Heat oil, add onion, mushroom, green pepper, celery
  3. Cook for a while, add chile powder, squash, garlic and cook for a bit more
  4. Measure out the bean broth and add veg stock to 2+ cups--this is for cooking the rice
    • The exact amount will depend on how soupy you want the finished product, I don't go much over 2 cups
  5. Deglaze the pan as needed, then pour in all the liquid, add rice and parsley and mix well
  6. Bring to a boil then reduce to a gentle simmer
  7. Simmer for 1 hour to cook rice

Enhance with Tajin.
