1 Grab-Ya-Green Sauce

  1. 6 large jalapenos, tossed in a bit of olive oil and roasted
  2. 1/2 C vinegar
  3. 2 cloves garlic
  4. Juice of 1/2 lime
  5. 3/4 tsp salt (original recipe calls for too much)
  6. 1/2 tsp curry powder

Worked great! Nice heat, jalapeno comes through clearly 1 Louisiana Red Sauce

  1. 45 Thai peppers, with all seeds
  2. 3 tsp sugar
  3. 3 tsp salt
  4. Most of a cup of blanching vinegar

1 Flaming Fruit Sauce

  1. Remove seeds from habs
  2. Done exactly as indicated, cumin flavour works very well with fruit

1 Easy Goin' Achiote

  1. Used blanching vinegar
  2. 4 cloves garlic
  3. Thai peppers instead of cayennes, deseeded
  4. String, smoky, but doesn't completely smother bell pepper flavour

1 Cajun Garlic Lover's Sauce

  1. Quadruple garlic

1 Tropical Storm

  1. Replace molasses with honey
