Hot Sauces
1 Grab-Ya-Green Sauce
- 6 large jalapenos, tossed in a bit of olive oil and roasted
- 1/2 C vinegar
- 2 cloves garlic
- Juice of 1/2 lime
- 3/4 tsp salt (original recipe calls for too much)
- 1/2 tsp curry powder
Worked great! Nice heat, jalapeno comes through clearly 1 Louisiana Red Sauce
- 45 Thai peppers, with all seeds
- 3 tsp sugar
- 3 tsp salt
- Most of a cup of blanching vinegar
1 Flaming Fruit Sauce
- Remove seeds from habs
- Done exactly as indicated, cumin flavour works very well with fruit
1 Easy Goin' Achiote
- Used blanching vinegar
- 4 cloves garlic
- Thai peppers instead of cayennes, deseeded
- String, smoky, but doesn't completely smother bell pepper flavour
1 Cajun Garlic Lover's Sauce
- Quadruple garlic
1 Tropical Storm
- Replace molasses with honey
