Mayocoba and Carrot Soup

Mayocoba and Carrot Soup
Ingredients
- 3 tblsp olive oil
- 2 medium onions chopped
- 2 cloves garlic
- 1 tsp thyme
- 1 lb carrots
- 8 oz mushrooms
- 1 cup vegetable stock
- 1 cup dry mayocoba beans with 1 cup bean broth
- salt & pepper
- White wine for deglazing
Procedure
- Cook onions, carrots, mushrooms, garlic, thyme in olive oil
- Separate out mushrooms
- Deglaze the pan with a bit of white wine
- Add veg stock bean broth and some beans (holding back however many you don't want to puree)
- Use immersion belnder to desired texture
- Add back mushrooms and reserved beans
- Heat to bubbling then off
