Mayocoba and Carrot Soup

Ingredients

  • 3 tblsp olive oil
  • 2 medium onions chopped
  • 2 cloves garlic
  • 1 tsp thyme
  • 1 lb carrots
  • 8 oz mushrooms
  • 1 cup vegetable stock
  • 1 cup dry mayocoba beans with 1 cup bean broth
  • salt & pepper
  • White wine for deglazing

Procedure

  1. Cook onions, carrots, mushrooms, garlic, thyme in olive oil
  2. Separate out mushrooms
  3. Deglaze the pan with a bit of white wine
  4. Add veg stock bean broth and some beans (holding back however many you don't want to puree)
  5. Use immersion belnder to desired texture
  6. Add back mushrooms and reserved beans
  7. Heat to bubbling then off
