Mushroom Carnitas

A very easy and versatile technique from the Rancho Gordo bean club recipes.

Chop mushrooms (whole or sliced) coarsely, place in wide pan. Cover with water, add salt. Add olive oil at about 1 oz to 16 oz mushrooms.

Add optional seasonings.

At medium high heat cook the mushrooms by boiling away the water, then sear in the oily residue.

Deglaze the pan with a bit of white wine.
