Pinto Bean and Pozole Salad

Ingredients
- 1 cup dry pinto beans cooked and drained
- 1 cup pozole cooked and drained
- 1/4 red onion, diced
- 1 1/2 cup grape tomatoes, quartered or 2 ripe plum tomatoes, seeded and diced
- 1/2 cup cilantro, chopped
- 1 small red bell pepper, seeded and diced (or some mix of red/yellow/green bell pepper).
- 1/2 cup radishes chopped coarsely
- 3 tablespoons freshly squeezed lime juice
- 4 tablespoons olive oil infused with...
- 1 tsp mexican oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1/2 tsp Salt
- Dash of garlic powder (if not using raw garlic)
Optional:
- 2 cloves garlic, minced and infused in the olive oil
- 1/2 cup Cotija chees, crumbled or 1/2 cup feta cheese, crumbled
- 1 jalapeño, seeded and diced
- 3-4 green onions
Mix "From the bottom up" (smaller quantities first). May be good to chill for hours before serving. Serve with a squeeze of fresh lime or lemon.
