Pinto Bean and Pozole Salad

Ingredients

  • 1 cup dry pinto beans cooked and drained
  • 1 cup pozole cooked and drained
  • 1/4 red onion, diced
  • 1 1/2 cup grape tomatoes, quartered or 2 ripe plum tomatoes, seeded and diced
  • 1/2 cup cilantro, chopped
  • 1 small red bell pepper, seeded and diced (or some mix of red/yellow/green bell pepper).
  • 1/2 cup radishes chopped coarsely
  • 3 tablespoons freshly squeezed lime juice
  • 4 tablespoons olive oil infused with...
  • 1 tsp mexican oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/2 tsp Salt
  • Dash of garlic powder (if not using raw garlic)


Optional:

  • 2 cloves garlic, minced and infused in the olive oil
  • 1/2 cup Cotija chees, crumbled or 1/2 cup feta cheese, crumbled
  • 1 jalapeño, seeded and diced
  • 3-4 green onions

Mix "From the bottom up" (smaller quantities first). May be good to chill for hours before serving. Serve with a squeeze of fresh lime or lemon.
