Potato Hummus
Potato Hummus
Based on the Rancho Gordo bean club news recipe 2023Q3, "Spuma di ceci".
Ingredients
- 1 cup dried chick peas
- 1 tsp baking soda
- 1 small potato, Yukon Gold preferred
- 2 oz sour cream plus more for serving
- 1 small onion, 180 g
- Thyme
- Salt and fresh ground pepper
Procedure
- Cook the beans with baking soda, 1 hr
- Boil the potato 15 min, until soft
- Caramelize the onion with the salt pepper and thyme
- Puree all the ingredients in a food processor
Serve with extra sour cream.
In fact the first iteration of this turned out quite bland and needed a bunch of salt plus on top of the sour cream I like it with some green olive tapenade. The interesting bit was how much potato flavour came through, this is to be worked with. Consider adding a whole packet of French Onion Soup mix (if you care about vegetarianism, mind that stuff usually is made with beef stock).
