Cheesy Italian Grilled Chicken Casserole

  • 4 boneless skinless chicken breasts
  • Oregano
  • Olive oil
  • Salt & Pepper
  1. Cut the chicken lengthwise into strips.
  2. Brush on olive oil, oregano, salt & pepper.
  3. Sear well on a very hot grill or pan.
  4. Cut into 1 inch chunks.
  • 1 box whole wheat penne or ziti

Cook until "almost" done, remember this is going in the oven. Drain as usual.

  • 3 oz fontina
  • 3 oz asiago
  • 2 oz ricotta
  • Some quantity of Pasta Sauce

Mix well the cheeses and sauce in a bowl with the chicken and pasta. Transfer to 9" x 13" baking dish. Cover with foil.

  • Shredded romano
  • Bread crumbs

Top the mixed ingredients with.

1 Preheat oven to 325F. 1 Cook 25 minutes. 1 Remove foil, cook 10 more minutes or until appropriately browned.

Serve with a pot of extra sauce on the side and grated parmesan.
