Cheesy Italian Grilled Chicken Casserole
- 4 boneless skinless chicken breasts
- Oregano
- Olive oil
- Salt & Pepper
- Cut the chicken lengthwise into strips.
- Brush on olive oil, oregano, salt & pepper.
- Sear well on a very hot grill or pan.
- Cut into 1 inch chunks.
- 1 box whole wheat penne or ziti
Cook until "almost" done, remember this is going in the oven. Drain as usual.
- 3 oz fontina
- 3 oz asiago
- 2 oz ricotta
- Some quantity of Pasta Sauce
Mix well the cheeses and sauce in a bowl with the chicken and pasta. Transfer to 9" x 13" baking dish. Cover with foil.
- Shredded romano
- Bread crumbs
Top the mixed ingredients with.
1 Preheat oven to 325F. 1 Cook 25 minutes. 1 Remove foil, cook 10 more minutes or until appropriately browned.
Serve with a pot of extra sauce on the side and grated parmesan.
