# Heat oil, add onion, mushroom, green pepper, celery
# Cook for a while, add chile powder, squash, garlic and cook for a bit more
# Measure out the bean broth and add veg stock to 2 + cups--this is for cooking the rice#* The exact amount will depend on how soupy you want the finished product, I keep it close to 2 cups
# Deglaze the pan as needed, then pour in all the liquid, add rice and parsley and mix well
# Bring to a boil then reduce to a gentle simmer
# Simmer for 1 hour to cook rice
